Swordfish has a slightly sweet flavor and a firm meaty texture. Color varies
from orange to pink to white. Most fresh swordfish sold at Publix has been
portioned with the bloodline and skin removed for a milder flavor providing a
100% edible product.
2 tablespoonfuls of olive oil
1/2 teaspoonful of garlic chopped
4 Swordfish steaks (3/4 inch thick)
Juice of half a Lemon
1 teaspoonful of Greek seasoning

Preheat grill to medium high. Combine the olive oil, juice
of 1/2lemon and chopped garlic in a medium bowl. Divide oil mixture in half and
set aside one half. Season fish with Greek seasoning and coat with oil mixture.
Grill fish for 5-6 minutes on each side or until flesh is opaque
and firm. Brush with the remaining oil mixture.
To compliment this try a nice dry table white wine available at all
large stores like Publix etc.
