Mahi-Mahi has a sweet mild flavor and very firm texture. Raw fillets are pink to grayish white and when cooked is off white.

 Ingredients
2 tablespoonfuls of unsalted butter, softened
1 teaspoonful Italian Herb paste
1 1/2lbs of Mahi-Mahi fillets
1/4 teaspoonful of salt
1/8 teaspoonful of pepper|

 Serves 4
NUTRITIONAL VALUES PER PORTION (APPROX) 240 Kilocalories; per 1/4 recipe
40g Protein; 7g Fat; 0g Carbohydrate; 5g Fibre Cholesterol; 40g Protein 300mg Sodium;  Vit A 10%; Vit C 8%; Iron 15%

 Method
Preheat the oven to 400F.
Combine butter , herb paste, set aside. Season fish with salt & pepper and place on a baking sheet.

Bake for 8 - 10 minutes or until opaque and separates easily. Top fish with butter mixture and allow to melt.

 Wine

To compliment this try a nice dry table white wine available at all large stores like Publix etc.
