Grouper has a mild flavor and firm texture. Its great for beginning seafood
cooks because it remains moist even if its a touch overcooked. All Grouper sold
at Publix is harvested from the Gulf of Mexico.
1 1/2 lb of Grouper fillets (3/4 inch thick)
1 tablespoonful of blackening seasoning
3 tablespoonfuls of Ranch Dressing
1/4 Cup of mayonaise
4 Hoagie rolls

Combine mayonnaise and ranch dressing. Set aside.
Preheat grill to medium. Grill fish for 4-5 minutes on each side or until
opaque and separates easily.
Place grouper in rolls. Top with mayonnaise mixture and your favorite sandwich
To compliment this try a nice dry table white wine available at all
large stores like Publix etc.
