4 Tuna Steaks ( 1/2inch thick) Swordfish may also be used
4 Tablespoons of Butter or margarine (melted)
PARSLEY LEMON BUTTER
1/4 cup of butter or margarine
2 tablespoons lemon juice
2 tablespoons of parsley chopped
Rinse fish steaks under cold, running water. Drain, and pat dry
with paper towels. Place on rack of broiler pan. Brush with 1 tablespoon melted
butter. Broil 4 inches from heat for 10 minutes. Turn fish, and brush with
remaining melted butter. Broil 8 minutes longer or until fish flakes easily when
tested with fork.
Melt butter in small saucepan. Stir-in lemon juice and parsley.
Keep warm. Remove fish to heated serving platter. Pour lemon butter over fish.
To compliment this try a nice dry table white wine available at all
large stores like Publix etc.
